Baked Lemon Cheese Cake - (Jan. - 09)
 
Ingredients:

Crushed graham crackers –

Apna Asia - (Our Asia Our Magazine) : Apna Recipes - Mal Pua
  ½ cup (available in baking aisle of supermarket)

Melted Butter – 5 tblspns

Low fat ricotta cheese – 1 ¼ Cup

Low fat cream cheese – ¾ cup

Sugar – ½ cup
 
Lemon juice – 1/3 cup (ideally freshly squeezed)
Lemon zest grated – 3 tsp  
Egg – 1no.  
Egg white – 1  
 
 
Method:
   
1. Preheat the oven to 315F, lightly grease an 8inch spring form pan and line
  the base with baking parchment.
2. Combine the graham crackers and the butter and press into the base of the
  pan. Refrigerate for 30 mins.
3. Beat the ricotta, cream cheese, sugar, lemon juice and 2 tsp lemon zest
  with an electric beater until smooth. Beat in the egg and the egg white.
4. Pour the mixture into the baking pan and sprinkle the surface with the
  remaining lemon zest.
5. Bake for 45 minutes - the center will still be a little wobbly. Leave to cool.
6. Once cooled, chill the cake for 5 hours before serving.
